Technique

Viticulture

The estate, founded in 1850, extends over 12 hectares, 4 of which face due south in the Château-Chalon appellation. Traditional ploughing is used, with no herbicides or pesticides added.

Oenology

Aged for three years under a veil of natural yeasts in 228-litre casks.

Suggestions for accompaniment

Salsify with truffles • Chicken with yellow wine • Mature Comté (or Gruyère).
