Viticulture
The estate, founded in 1850, covers 12 hectares, 4 of which are south-facing in the Château-Chalon appellation (steep hillside, slope up to 50%, soil of Lias marl covered with limestone scree at the foot of the cliffs overlooking the old village). Traditional ploughing, without the use of herbicides and pesticides. Very low yields of around 25 hl per hectare.
Oenology
It is aged for a minimum of 12 months in oak barrels and must have between 16° and 22° of alcohol to obtain the AOC.
Suggestions for accompaniment
To be drunk as an aperitif or with fruit desserts, serve at 10°.
