Viticulture

Since the donation of Jean de Pontac, the founder of Haut-Brion, to the religious order of the Carmelites in 1554, this discreet property, somewhat hidden in an island of greenery, stands out as one of the few in the Pessac-Léognan appellation to produce only red wine. The terroir is mainly composed of Günz gravel and Aeolian sands on a limestone base. The average age of the vines is 35 years. The planting density is 10,000 vines per hectare.

Oenology

The harvest is entirely manual. The must is macerated and fermented in temperature-controlled stainless steel vats for 15 to 24 days. The size of the vats (from 40 to 80hl) corresponds to the parcel distribution of the vineyard. The rest of the maturing is done in barrels, 50% of which are new, and lasts 18 months.
