Viticulture
Valérie and Benoît Lahaye cultivate the vineyard in organic farming. The soil is worked in its entirety, partly with a horse. Home-made compost. Treatments based on plant teas, copper, sulphur and essential oils. The vines for this vintage were planted in 1973. Shallow, brown limestone soil. Density of 8400 vines/ha. Rootstock 41B. Cordon de royat training.
Oenology
Produced by short maceration of pinot noir (about 20 hours) in whole bunches. Alcoholic fermentation in regulated vats and barrels. Extra-brut dosage.
Suggestions for accompaniment
Sea bass with oriental spices - Octopus, salsify and truffles - White meat - Cheese.
