Viticulture
Valérie and Benoît Lahaye cultivate the vineyard in organic farming. The soil is worked in its entirety, partly with a horse. Home-made compost. Treatments based on plant teas, copper, sulphur and essential oils. A new compound cuvée from a 20-acre plot planted in 1952 in Voipreux (near Vertus).
Oenology
Organic wine from the 2018 & 2019 harvests, aged for 2 years and 1 year in barrels with no added sulphites. Blending and bottling in 2018. Not dosed (natural)
Suggestions for accompaniment
Serve with oysters and seafood, fine fish in papillotes, river fish.
