This winegrower is one of the spearheads of the village of Bouzy, known for its great Pinot Noir. His biodynamic approach and his style favour nuance and delicacy. Viticulture

Valérie and Benoît Lahaye cultivate the vineyard in organic farming. The soil is worked in its entirety, partly with a horse. Home-made compost. For this cuvée, a blend of vines from Bouzy (80%) and Ambonnay (20%). Brown limestone soil. Density of 8400 vines/ha. Rootstock 41B. Cordon de Royat and Chablis pruning. Average age of the vines 35 years.

Oenology

Malolactic fermentation carried out. No racking, one or two batonnages in barrels. Cellaring in the spring following the year of the last vintage blended, disgorging one and a half years later. Zero dosage: 0gr/l.

Roasted poulard • Lobster ravioli in Thai broth • Semi-dry goat cheese.

Domain
The Lahaye family have been winegrowers since the 1930s. The current generation, Benoît, his wife Valérie, and now their children Etienne and Valentin, are still based in the family village of Bouzy. The couple cultivates (certified organic since 2003 and biodynamic since 2010) a little less than 5 hectares of vines, mainly pinot noir, spread over Bouzy, Ambonnay and Tauxières-Mutry. He has also launched new cuvées: Violaine (no sulphur), Le Jardin de la Grosse Pierre (plot selection and ancestral grape varieties) and now even a Blanc de Blancs, in the land of pinot! Today, the company is recognised for the seriousness of its work, the constant quality of its wines and the maintenance of a faultless range, and its recognition extends beyond the borders of France.
