Viticulture
Surface area: 1.30 hectares. Soil type: Kimmeridgian limestone marl. Location and exposure: located on a hillside in the commune of La Chapelle-Vaupelteigne, the Fourchaume 1er cru benefits from a west-southwest exposure. Several plots are used to make this wine. Planting density: 6,000 vines per hectare. Age of the vines: from 34 to 39 years. Integrated viticulture: mechanical working of the soil, reduction of inputs with the "Changins" method, biodynamic trials.
Oenology
Manual harvesting. Pneumatic pressing of whole grapes. Slow pressing at low pressure. Vinification: vinification and maturation take place in vats. Maturing on fine lees refines the wines for 18 months.
