Reddish brown colour with golden hues. Characteristic aromas of Amontillado with intense notes of walnut, roasted hazelnut, chamomile and white truffle. Clearly dry on the palate and still perfectly balanced despite its 21° alcohol, this is a salty, slightly bitter wine on the finish, with a fat texture and lingering cocoa, almond and even breadcrumbs, reminiscent of the Fino it once was. The amontillado is the result of oxidative enrichment obtained following the ageing of what is initially a Fino, i.e. a wine with a veil of yeast, aged for a long time in old oak barrels.

Suggestions for accompaniment

A great wine for meditation, to be drunk on its own or with great dry cheeses such as Manchego, Peccorino, old Gouda.
