Founded in 1844 by Antonio Sanchez Prieto in Aguilar de la Frontera, Bodegas Toro Albalá was converted into a winery in 1922 by José Ma Toro Albalá. Located in the Montilla Moriles region, famous for its sherry, the winery produces highly concentrated wines after drying the grapes in the sun.
Oenology
To obtain an Amontillado like Viejisimo, the ageing period must be at least 25 years. This one is produced from a Solera started in 1922 and therefore also contains ancestral wines.
Suggestions for accompaniment
To be drunk on its own, with a handful of dried fruit or old Basque sheep's cheese.
