Pale gold in colour, the nose opens slowly with notes of orchard fruits. The integration of the maturation is to be cited as an example. The attack is both rich and dense, the wine offers fatness and depth. It finishes serious, vinous, still reserved on the finish, indicating superb potential for ageing. In its style and texture, it is reminiscent of some of the great Burgundy wines...

Viticulture

Since 2006, the estate has expanded its range of wines from various vineyards around Schinznach in the canton of Aargau. Tom Litwan does not come from a wine background but discovered his passion for wine in Burgundy, then trained as a winemaker by working for 8 years at the Domaine des Balisiers in Geneva, a pioneer of biodynamic farming in Switzerland. He has been certified since 2010 and has been awarded the Démeter label since 2014.

Oenology

20 year old vines, whole bunch pressing, one year of ageing in barrels without new wood, then 6 months in vats, racked in March.

For Tom Litwan, the adventure really began in 2006. Soon, the reputation of his wines began to grow, gradually extending beyond the circle of initiates to which it was conceived. In 2018, Tom took over the vineyard of Walter Haefliger in Oberhof, a local winemaker who has always worked in biodynamic viticulture, and now has 5.5 hectares of vines cultivated according to biodynamic principles. But, he says with humour, "I don't own anything. I started with nothing and I won't get anywhere! Not sure! Judging by the quality of his Pinot Noir cuvées, we can even say that this is a joke: very quickly his wines arouse the interest of wine lovers as much as of prescribers and journalists.
