  • Grape variety(ies): Syrah. Le cépage arrive pour la première fois en 1921 en Valais, mais il est planté de manière plus importante à partir de 1937. Il existe de grandes similitudes entre les Syrah des côtes-du-rhône françaises et les climats et terroirs valaisans. C’est dans sa limite septentrionale qu’elle donne les plus grands vins et la vallée du rhône valaisanne répond parfaitement à ces critères.

The nose is of the white pepper type, even nutmeg, but also sometimes, depending on the vintage, one finds notes of leather. The attack is supple and reminiscent of eucalyptus, then the palate evokes undergrowth, spices such as pepper and cloves, the long finish is silky.

Viticulture

The vines used to produce the "Syrah" cuvée are located partly in Fully, on gneiss bedrock, and partly in Leytron, on a more or less crumbled schist soil with a presence of clay between the layers. The vineyard benefits from a continental climate with Mediterranean tendencies, with optimal sunshine, especially during the vegetative period. The Foehn effect favours a healthy state of the bunches at harvest time. Maximum 40 hl/ha.

Oenology

Vatting period of 3 to 6 weeks, 70% whole bunches, aged in 400l to 12 hl barrels, no new wood.

Suggestions for accompaniment

Rack of pork marinated with herbs and cooked at low temperature - Saddle of hare with pepper.

Domain
Alexandre Delétraz is the story of an idealist from Geneva who moved to the Valais. In his own words: "La Cave des Amandiers is a bit of a utopia or rather a dream... A life project! It is the desire to create great wines in exceptional terroirs while respecting nature, to reveal the qualities of the Valaisan grape varieties in an authentic environment and to offer the wine the time to grow in the coolness of the cellar. The cellar is one of the youngest in the Valais, since it was created in 2008. After having vinified the first vintage in a mazot, then in a tractor garage in Fully, Alexandre found a more suitable place in the commune of Saillon. He moved into this new cellar in 2011 and although the vinification facilities are recent, the work remains totally artisanal. The vines are tended by hand because of the uneven topography, made up of small terraces that stretch from 450 to 900 metres above sea level over 5.2 hectares. This is an opportunity to remind ourselves that vine growing in the Valais is sometimes also mountain viticulture. This heroic viticulture is perfectly illustrated by the different entities that Alexandre owns in Fully: Les Seyes, Les Follatères, La Combe d'Enfer, Chanton d'Euloz, La Combe des Cloux.
