Viticulture
Located in the village of Fully, at an altitude of 732 metres, the vines are on average 40 years old and grow on a 35-acre parcel of gneiss bedrock, covered with a light soil of sand and very gravelly silt with little limestone (> 6.7%). The vineyard benefits from a continental climate with Mediterranean tendencies and optimal sunshine, particularly during the vegetative period. The Foehn effect favours a healthy state of the grapes at harvest time. The estate has greatly reduced the yields in recent years for this cuvée: 30 hl/ha maximum.
Oenology
The must is vinified 100% in whole bunches, 1 month in vats and then spent in used demi-muids for 11 months.

Rack of pork marinated with herbs and cooked at low temperature - Saddle of hare with pepper.
