The wine has a clear red colour and presents scents of red fruits and dried flowers accompanied by some woody notes. On the palate, it is harmonious and distinguished by nuances of red fruit and undergrowth accompanied by a few well-integrated woody touches. A good body and still young tannins ensure that it will keep for many years.

Origin of the name: name of the parcel from which the grapes come, located in St. German, at an altitude of about 700 metres. The grapes come from a single plot of land in the St. German vineyard, which is cultivated in cordon pruning with a high planting density. Very low yields. Calcareous soil, not very stony, of low thickness.


Cold pre-fermentation maceration for 14 days followed by 3 pump-overs per day during the alcoholic fermentation in stainless steel tanks. Followed by 12 months of barrel ageing. No new barrels used. Malolactic fermentation carried out during barrel ageing.

Originally from Fribourg, Romain Cipolla discovered the world of wine at the gym during a tasting session with some friends. His passion was born. He then trained in oenology and viticulture. After internships with Claudy Clavien in Miège and Philippe Constantin in Salquenen, Romain continued his quest and moved to the Upper Valais in 2014. In Rarogne more precisely, a place dear to those who love Rilke. Romain Cipolla works 2.5 ha of vineyards on the slopes between Rarogne, St-German and Visperterminen; some of them, very steep with slopes of more than 30% making mechanisation impossible, were doomed to disappear. He practices organic viticulture and produces wines of great purity.
