Viticulture
The estate is located in the heart of the Pic Saint-Loup appellation, at an altitude of between 150 and 200m, on a terroir of clay-limestone slopes with a south-southeast exposure. Yields of 15 hl/ha for this cuvée from vines planted in 1990. The estate has been certified organic since the 2010 vintage.
Oenology
Traditional vinification and 35-day maceration with manual punching down. Aged 24 months in barrels with 30% new wood.
Suggestions for accompaniment
To be decanted for 1 to 2 hours and then enjoyed with a roast goat, a leg of lamb or a fillet of beef en croûte.
