We are here on a granite from the village of Château Thébaud (granodiorite with biotite and hornblende), which represents a sort of island in the heart of the Nantes vineyard (only 4% of the total cultivated area). This granite terroir, which is very advanced in its alteration, allows for excellent natural drainage, but also ideal rooting. The vines grown here are over 60 years old, and produce very little, never more than 45hl/ha before sorting.
Oenology
For the vinification, the estate uses a pneumatic press, and controls the fermentation temperatures. The musts are then aged for 4 years in underground tanks, without any racking. The autolysis of the yeasts is therefore done very gradually, as the wine becomes more complex. It is finally bottled without fining or filtration, and can then proudly bear the mention of its Cru.
