Viticulture
Name of plot: Les Châteaux - Chignin. Age of vines: 12 years. Soil type: Clay-limestone, parent rock at 15 cm. Exposure: south. Slope: 40%. Vine density per hectare: 8,000 vines per hectare. Yield: 40 hl/ha. Winegrowing method: certified AB by Ecocert.
Oenology
Harvested by hand, the grapes are transported in crates, arriving intact at the winery. Cold maceration for 12-24 hours. Spontaneous fermentation by indigenous yeasts. Vatting for 2 to 3 weeks. Light foot crushing. Malolactic fermentation completed. Aged in 600-litre demi-muids for 2-3 wines.
