Adrien's latest projects include rebuilding a forgotten vineyard in Détrier, at the gateway to the Gelon valley, with 4 hectares of heritage grape varieties grown under pergola (bia blanc, barbin, joubertin, verdesse, mondeuse blanche and noire, altesse) and taking over an estate in the Coisin valley.
Oenology
Harvested by hand, the grapes are transported in crates to protect them from oxidation before they reach the winery. Whole bunch vatting, 15-day maceration, light crushing. Slow pressing, gravity-fed into the vat. Static settling. Spontaneous fermentation by indigenous yeasts. Aged in vats.

Spring vegetable terrine with fresh herb vinaigrette - Beef tartare with knife, hazelnut slivers and old-fashioned mustard - Home-made pizza with spring onions, spinach and Savoy tomme.
