Viticulture

Aldo Vajra is the pioneer of Riesling cultivation in Piedmont. Two vines are at the origin of this wine: one on Barolo (Fossati), the other on Sinio (Bric Bertone). Rhenish vines planted in 1986, to which are added old grafted vines from JM Deiss: the German vines bring acidity and geometric structure, those from Alsace give more body and suppleness. Guyot cultivation, natural grassing, green harvesting if necessary.

Oenology

Vinification in vats. Part of the malolactic fermentation is carried out (maximum 50%). Aging and bottling in the spring following the harvest.

Suggestions for accompaniment

Grilled shrimps and mango with coconut - Tandori chicken leg - Scallops with lime and endives.
