Vines located in the area known as "Tzouma", at the foot of the Haut de Cry massif. Dry and arid limestone soil. Very hot microclimate due to the heat restitution by the rocky wall. Late ripening grape variety harvested at 88O Oe at the very end of the harvest. Organic conversion (biosuisse).
Destemmed harvest, maceration and alcoholic fermentation over 21 days with punching down twice a day. Aged in concrete vats with different aeration until bottling at the end of July.

Roast poultry (guinea fowl, duck) - Alpine cheese.
