With its light yellow colour, this Fendant has a very fine nose with notes of vine flowers and lime blossom accompanied by a slight mineral scent reminiscent of gunflint or flint. On the palate, the wine is lively and fresh. It has the same perceived aromas with a fruity side. It is a light and harmonious wine with a lot of finesse.

Viticulture

Origin of the name: Poem written by the famous Austrian writer Rainer Maria Rilke, who is buried in Raron, when he lived in the Valais. It refers to grapes and wine. Several parcels spread over the St. German vineyard (altitude: 750 m). Generally light, chalky soil from scree.

Oenology

The wine is made in stainless steel tanks. The vinification is traditional, without malolactic fermentation and keeping a light carbonic in order to preserve all the freshness.

Aperitifs, cheese dishes, Valaisan dishes, fish.

Originaire de Fribourg, Romain Cipolla a découvert le monde du vin au gymnase lors d’une dégustation avec quelques amis. Sa passion était née. Il s’est formé ensuite en œnologie et en viticulture. Après des stages chez Claudy Clavien à Miège et chez Philippe Constantin à Salquenen, Romain a poursuivi sa quête et s’est installé dans le Haut Valais en 2014. A Rarogne plus précisément, lieu cher à celles et ceux qui aiment Rilke. Romain Cipolla y travaille 2.5 ha de vignes en coteau entre Rarogne, St- German et Visperterminen ; certaines, très escarpées avec des pentes à plus de 30 % rendant toute mécanisation impossible, étaient vouées à la disparition. Il y pratique une viticulture bio et en tire des vins d’une grande pureté.
