The vineyards are located in the Contrada S. Spirito, in the municipality of Castiglione di Sicilia. The plantations were made in 1950 and 1960, but some of the vines are pre-phylloxera. Soil of volcanic ash. The vineyards are on the northern slopes of Mount Etna. Santo Spirito is the last "Cru" purchased by MDG, and is a very famous terroir locally.
Maceration for 10 to 15 days followed by 18 months in oak barrels (25% new wood). Malolactic fermentation is done in barrel. Unfiltered.
Suggestions for accompaniment
Duck pie with spices - Guinea fowl with morels - Pheasant with juniper.
