Viticulture
Municipality of Montalto, municipality of Biancavilla (Catania). Area: 2 hectares. Deep volcanic soil, mainly ash, loose with the presence of small stones. South side of Mount Etna, from 900 to 950 metres above sea level. Age of the vines: from 60 to 90 years.
Oenology
Soft pressing, low temperature fermentation in 5 and 10 hl French oak barrels. Malolactic fermentation and maturation in French oak demi-muids for 10 months, then in bottle for 8 months.
Suggestions for accompaniment
Cherry tomato, mozzarella di buffala and fresh basil salad - Pan-fried squid in olive oil - Seafood orecchiette.
