Etna rosso, Calderara Sottana, T. Terre Nere - 2020

Do we still need to introduce the artist Marco de Grazia and his Terre Nere estate, which is one of Etna's elite producers? In recent vintages, Calderara Sottana has produced a wine of great character, with balsamic aromas of spice and tobacco; the body is supremely elegant, with a finesse of grain reminiscent of Burgundy. It is very similar to the Prephylloxeric cuvée, from the same terroir!

Technique

Viticulture

Vines located in the municipality of Randazzo, in Contrada Calderara. Planted in 1957 and 1967. Soil of volcanic ash, pumice and pieces of rock expelled from the volcano. The vineyard is clinging to the north face of Mount Etna, at 650-700 metres above sea level.

Oenology

Maceration for 10 to 15 days followed by 18 months in oak barrels (25% new wood). Malolactic fermentation is done in barrel. Unfiltered.

Suggestions for accompaniment

Golden duckling with figs and chestnuts - Pigeon with spiced caramel.
