Viticulture
Contrada Calderara, commune of Randazzo (Catania). Surface of the vineyard: 3,5 ha. Soil: volcanic ash with black pumice and solid volcanic rock. Exposure: northern slope of Mount Etna, 600 to 650 metres above sea level. Average age of the vines: between 15 and 60 years. Goblet and modified goblet cultivation. Harvested in early October.
Oenology
Soft pressing, low temperature fermentation in 5 and 10 hl French oak barrels. Malolactic fermentation and maturation in French oak barrels for 10 months followed by 8 months of bottle ageing.

Cherry tomato, mozzarella di buffala and fresh basil salad - Pan-fried squid in olive oil - Seafood orecchiette.
