Viticulture
Pascal Montaut is one of the pioneers of the so-called ‘satellite’ appellations of Côtes de Blaye and Côtes de Bourg (Clos Alphonse Dubreuil). Following in the footsteps of F. Mitjaville (see Roc de Cambes), great care is taken here with viticulture (green harvesting, leaf thinning, etc.). The terroir is composed of blue and grey clays with fossils.
Oenology
Hand-harvested, 40 hl/ha, 80 to 100% destemmed depending on the year. Aged for 15 to 16 months in barrels, 50% of which are renewed.
Suggestions for accompaniment
Aubergines parmigiana - Beef cheeks braised in red wine and creamy polenta.
