Viticulture
Pascal Montaut is one of the pioneers of the so-called "satellite" appellations Côtes de Blaye and Côtes de Bourg (Clos Alphonse Dubreuil). Following the model of F. Mitjaville (see Roc de Cambes), great care is taken here in viticulture (green harvesting, leaf removal, etc.). The terroir is composed of blue and grey clay with fossils. Certified organic farming.
Oenology
The grapes are harvested by hand in crates, the destemming is also manual and the crushing is done at the feet. Fermentation in new open oak barrels of 500 l. Pigeage. Aged in the same closed barrels. No mechanical intervention.
