Technique
Viticulture
Surface area: 0.85 hectares. Soil type: Kimmeridgian limestone marl. Location and exposure: located on a hillside in the commune of La Chapelle-Vaupelteigne, the Fourchaume 1er cru benefits from a west-southwest exposure. The plot of "La Pièce au Comte" is one of the oldest on the estate. Planting density: 6,000 vines per hectare. Age of the vines: from 60 to 69 years old. Integrated viticulture: mechanical working of the soil, reduction of inputs with the "Changins" method, biodynamic trials.
Oenology
Manual harvesting. Pneumatic pressing of whole grapes. Slow pressing at low pressure. Vinification and maturation are carried out 100% in barrels. Maturing on fine lees refines the wines for 18 months. A special bottle is dedicated to this wine which symbolises the history of the estate.
