Viticulture
Approximately 0.4 hectares located on the plain of Pommard and Volnay. East facing. Massal selection. Deep clay-silt soil (ancient alluvium). Vines 50 years old. Certified organic cultivation.
Oenology
Hand picked, grapes sorted, destemmed but not crushed. Vatting by gravity, indigenous yeasts, gentle maceration and fermentation, little punching down, closed vats. Aged in stainless steel tanks for 12 to 14 months. However, 20% to 30% of the cuvée is aged for 6 to 8 months on the lees, in one or two-wine barrels. After blending, the wines are bottled at the right time, without filtration.
