Viticulture
It was born of the desire to create a 'great' white wine from the family's Grand Village estate. It is located in Mouillac, between the Côtes de Bourg and Fronsac regions, on a clay-limestone terroir that is particularly well-suited to Sauvignon Blanc. The average age of the vines is 20 years. The planters have been renewed by choosing vines of Sancerre origin. Cultivated area: 0.7 hectares. Sustainable viticulture. Manual green harvesting adapted to climatic conditions (pruning, leaf removal, thinning).
Oenology
Harvested by hand; plot-by-plot selection, double sorting in the vineyard. Low-pressure pressing. Vinification 100% in new barrels. Aged 9 months on fine lees in oak barrels, light stirring of the lees for 5 months.
