Viticulture
It was born from the desire to create a "great" white wine from the family estate Grand Village. It is located in Mouillac, between the Côtes de Bourg and Fronsac, on a clay-limestone soil particularly favourable to Sauvignon. The average age of the vines is 20 years. The vines have been renewed by choosing vines of Sancerre origin. Cultivated area: 0.7 hectare. Sustainable cultivation. Manual green harvesting adapted to the climatic conditions (thinning out the leaves, thinning out the vines).
Oenology
Manual harvesting; plot selection, double sorting in the vineyard. Low pressure pressing. Vinification 100% in new barrels. Aged for 8 months on fine lees in oak barrels, light stirring for 2 months
