Viticulture
A family estate now in its fifth generation, located on the Côteaux du Cher, with south-facing plots. Vincent cultivates a total of 12.7 hectares of Sauvignon Blanc. He regularly works the soil and uses grass cover. The Trois Chênes cuvée comes from old vines (the oldest was planted in 1950). Yields of 35 hl/ha.
Oenology
Sorting of the juice during pressing. Slow fermentation at 17O for 3 months, followed by 8 months maturation on fine lees in barrels.
