Syrah Quintessence, Benoît Dorsaz - 2012

En 2012, ce vin est à nouveau le sommet de la cave de Benoît Dorsaz et confirme qu’il fait partie du top ten des meilleures syrah suisses. Il faut dire que le terroir de Fully est béni des dieux pour le cépage, avec ses sols pauvres et ses expositions impressionnantes. On admire ce nez stylé qui évoque de grandes côtes rôties, avec ses nuances d’orange sanguine et son élevage de qualité ; la bouche prolonge ce plaisir, off rant à la fois densité, finesse et intensité. Superbe.

Viticulture

Il s'agit uniquement de sélections massales (pas de clône) dont certaines sont de la serine pointue, en provenance directe de prestigieux vignobles des Côtes du Rhône nord (Bernard Grippa et René Rostaing). Terroir des Perches : gneiss avec moraines légèrement calcaires.

Oenology

Récolte manuelle, tri sur la vigne. Macération préfermentaire à froid, remontages. Départ naturel en fermentation. Plus de 20 jours de macération et fermentation. Elevage de 18 mois au total, dont 12 en barriques. Après 12 mois, les barriques sont assemblées, puis finissent leur maturation en cuve d'assemblage.

Born into a family of winegrowers, Benoît Dorsaz grew up among the vines. In 1986, he inherited a plot of chasselas. From then on, he rented the family's vineyards and undertook the replanting of the vineyard as well as the renovation and expansion of his father's cellar, with the support of his wife Maryline. Little by little, the property was enlarged in order to ensure a sustainable family business. At the estate, excellence is sought well before the quality of the wines. In this spirit, all the viticultural, oenological, commercial and administrative processes are ISO 9001 and ISO 14001 certified. Benoît and Maryline also attach great importance to the social role of winegrowing, in particular by offering optimal working conditions. Since 2003, the couple has refused all proposals for expansion. Convinced that great wine goes hand in hand with respect and integrity, Benoît Dorsaz adopts environmentally friendly growing methods and militates for a social, sustainable and realistic viticulture. This research has led him to organic and biodynamic agriculture. In addition, to respect his soils and help nature, the winegrower favours spontaneous grassing which brings biodiversity.In the cellar, the same philosophy allows the wines to express the particularities of each vintage and of the particular terroir of Fully, where two massifs overlap.
