Commune of Fully, terroir of Les Perches (gneiss with slightly chalky moraines) and Plamont (vineyard ‘embedded’ between 3 murgères which act as a ‘solar oven’).
Oenology
Harvested by hand. Very gentle pressing with a few hours' maceration in the press. 40% of the vinification in vats and 60% in barrels (no new wood), slow fermentation, no malolactic. Aged 40% in metal vats, on fine lees, and 60% in barrels with stirring for 6 months.
Suggestions for accompaniment
Aperitif - Freshwater fish in sauce - Purslane salad, sesame-breaded prawns and stuffed piquillos.
