Viticulture

This wine comes from the vineyards of Wenzlau, Sanford & Benedict, La Rinconada and Bentrock: Gazas clay, Tierra sandy clay and Sorento clay. It is a blanc de blanc sparkling wine made using the Champagne method. The 2020 vintage also includes 50% reserve wines from the 2018 and 2019 harvests from various Santa Rita Hills terroirs.

Oenology

The grapes were hand-picked using crates and then gently pressed. The wines were aged on their lees in bottle for 30 months. No fining or filtration. Dosage: 4.0g/L (Extra Brut). Bottled in April following the harvest. Disgorged in February N+3.

Suggestions for accompaniment

Pan-fried prawns with chickpeas and spinach leaves - Fish curry - Goat cheese.
