The Petite Arvine from the Simon Maye winery is undoubtedly one of the most beautiful in the Valais. Vinified with a view to making a great dry white wine and not a varietal one, it is a school wine, an ode to the limestone of its terroir! It has a particular brilliance, with its palette of lemon, wisteria and rhubarb aromas, and its sapid and saline finish.

Technique

Viticulture

The vines are located in the area known as "Illiarisses", in the scree slopes under the Haut de Cry wall, and in the limestone breaks on the terraces of the Ardon hillside, two dry and arid terroirs in which Petite Arvine can perfectly express its characteristics. The estate is in organic conversion (biosuisse).

Oenology

The grapes are not crushed and are gently pressed. Settling and slow alcoholic fermentation at a temperature of 20O. Aged on fine lees until mid-June. Bottling at the end of July.
