Viticulture
The vines are located in the area known as "Illiarisses", in the scree slopes under the Haut de Cry wall, and in the limestone breaks on the terraces of the Ardon hillside, two dry and arid terroirs in which Petite Arvine can perfectly express its characteristics. The estate is in organic conversion (biosuisse).
Oenology
The grapes are not crushed and are gently pressed. Settling and slow alcoholic fermentation at a temperature of 20O. Aged on fine lees until mid-June. Bottling at the end of July.

Sea bass tartar - Royale of cod with citrus fruits - Scallops with 4 endives and lime - Hard cheeses.
