Viticulture
These are new plantings from the early 2000s, on new land with good south-west exposure but difficult to work because of the steep slopes. The name "Combottes" is a diminutive of combe, alluding to the hilly nature of this parcel. Situated in the "Les plantes des champs et combottes" climate, the hillside is an extension of the village and the soil is white, marly and fairly light. The rows are short, with ditches to contain erosion.
Oenology
The juice is pressed in a pneumatic press for two hours. After settling the must for 24 hours at low temperature, the juice is placed in barrels for fermentation. The proportion of new oak is 30%. The wine is bottled after 12 months of ageing.
Suggestions for accompaniment
Fish in papillotes, pies, pan-fried or roasted dishes or delicately cooked white meats.
