Viticulture
En Caradeux, facing east, is situated on very steep ground at the foot of a hillock. It has little rock, light and sandy soil on crumbling lava, among gravelly mountain scree. The 19th century spelling of En Quart à Deux suggests that it owes its name to its quadrangular configuration, between two paths that run along the road through Pernand. The upper part of the slope is in the village appellation and the greater part in the 1er Cru.
Oenology
Pressing is done with a pneumatic press and lasts two hours. After 24 hours of settling at low temperatures, the juice is placed in barrels for fermentation. The proportion of new wood is 30%. The wine is bottled after 12 months of ageing.
Suggestions for accompaniment
Fish in papillotes, pies, pan-fried or roasted dishes or delicately cooked white meats.
