Viticulture

Coming exclusively from the 'La Rochelle' climat, 4,218 ha, below the neighbouring 'Vérillats' terroir, on the heights of the appellation at 280m, 'La Rochelle' is situated under the upper part of the southern slope of the Vérillats massif. The soils are made up of granitic sands, which are deeper than those of 'Les Vérillats'. Southern exposure, right in the windy corridor. Planting density: 10,000 vines/ha. Age of the vines: 70 years.

Oenology

Manual harvesting. 30 litre tanks. Sorting table before 100% de-stemming. Cold pre-fermentation. Maceration for 3 weeks. Pumping over during cold pre-fermentation and at the end of fermentation to bring finesse and roundness. Pigeage at the beginning of fermentation. Aged in barrels (20% new) for 16 months. French oak from the Vosges and Allier forests, medium toast. 30% in 228L and 70% in 350L.
