45 year old vines, located near Castiglione Tinella at an altitude of 300m. Average yield: 750 g/m2. Annual production about 55'000 bt.
Very short alcoholic fermentation (stopped by the cold: zero degrees) to obtain maximum residual sugar and a low alcohol content of about 5%; then long natural fermentation in autoclaves (about 1 month) to obtain the foam. Residual: a little over 100 g/litre.
