The second wine from a Château that needs no introduction, this wine demonstrates the greatness of the vintage, because the quality is such that in other circumstances, these grapes could have been used for the first wine! All the genius of the year is to be found in this devilishly accessible vintage, which is also well equipped for ageing. Technique

Viticulture

Gravel and clay terroir on a clay-limestone subsoil. Average age of vines: 25 years. Planting density: 8,333 vines/ha. Double Guyot pruning. Traditional tillage. Reasoned organic amendments. No anti-botrytis treatment. No green harvesting or leaf removal. Named after Mr and Mrs Gautreau's daughter, this wine accounts for 20-30% of the harvest, depending on the vintage.

Oenology

Hand-picked from 27 September to 13 October, in crates with sorting on tables before and after de-stemming. Traditional vinification (pumping over, delestage) in temperature-controlled cement and stainless steel vats. Vatting time: 25 days. Malolactic fermentation in vats. Ageing 30% of the wine in new barrels for 12 months.

Rack of veal - Braised beef chuck - Roast duck with citrus fruit, turnips and quinces.
