Technique
Viticulture
The plots are located in Begnins, with a few square metres in Luins. The soils are derived from limestone bedrock, more or less developed on a sandy-stony Rhodanian moraine. Located at the foot of the Jura, these plots benefit from the drying power of the Joran, which creates a favourable microclimate. The work in green is done by hand, from pre-pruning to harvesting. The Gamay grapes are thinned out in several passes, in order to gently accustom them to the sun.
Oenology
Manual harvesting. The grapes are not sulphited and are yeasted with a tank foot, with no chaptalisation. The maceration is traditional, a short week, with daily pumping over. The wine is aged in vats for several months, the duration varying according to the year. The wine is filtered before bottling because of the low SO2 content.
