The Guibert brothers, of Daumas Gassac, founded Atelier Guibert in 2022. Roman, the 2nd brother , embarked on a training course at Prieuré-Roch and, invigorated by the experience, started making wines that were unrestrained, accessible and focused on the pure expression of the fruit. Together with Basile, the youngest, they set about making this project a reality, with the first vintage in 2022. The vines are planted in a mosaic of sandy soils with poor, stonier clay-limestone soils on a plateau, resulting in low yields.
Oenology
100% whole cluster fermentation with indigenous yeasts followed by gentle extraction. Aged for nine months in 228 liter barrels (no new oak) and stoneware jars. No fining and no filtering was done.This was followed with nine months of bottle aging.
Suggestions for accompaniment
Grilled lamb chops with herbes de Provence – Sun-ripened vegetable tian – Duck breast with roasted figs.
