Viticulture
The Guibert brothers, of Daumas Gassac, founded Atelier Guibert in 2022. Roman, the 2nd brother , embarked on a training course at Prieuré-Roch and, invigorated by the experience, started making wines that were unrestrained, accessible and focused on the pure expression of the fruit. Together with Basile, the youngest, they set about making this project a reality, with the first vintage in 2022. This wine comes form three micro-plots of cinsault surrounded by scrubland. The vines are planted in clay-limestone soils.
Oenology
Whole cluster fermentation with indigenous yeasts, and gentle extraction. Aging for 9 months in 228 liter barrels (no new oak) and stone war jars. The wine is unfined and unfiltered. Aged for 9 months in bottle.
Suggestions for accompaniment
Tuna tartare with pink peppercorns - Beef carpaccio with fresh herbs - Risotto with spring vegetables.
