On the clay and silt soils characteristic of the Costières, Michel Gassier and his team practice a demanding viticulture in order to bring the great grape varieties of the south to ideal maturity. Among them, the Viognier, which gives here a thirst-quenching wine, aromatic and fresh, rich in texture, but easy to drink. The price/pleasure ratio is of the highest order!

Viticulture

Clay and silt soil. Yield limitation by disbudding and green harvesting. Manual leaf removal to promote ripening and the health of the grapes.

Oenology

Hand-picked and sorted. Skin contact maceration at low temperature for 12 hours. Fermentation in vats and maturation on lees with stirring until Christmas. Fining, filtration and bottling in March.

Suggestions for accompaniment

Aperitif • Monkfish with curry • Poultry whites with satay.
