Viticulture

Cebreros vineyards - Sierra de Gredos, old vines planted over 60 years ago at an altitude of over 900 metres, with low yields per hectare, very poor, loose granite sand soils with different textures and slate outcrops in some areas.

Oenology

Hand-harvested in 25 kg crates, spontaneous fermentation at low temperature with indigenous yeasts in concrete vats. Aged in 150hl wooden tuns for 12 months, single racking and filtration, bottled with low levels of so2.
