Viticulture
First vintage: 2015. In the past, this terroir was incorporated into the Fortis cuvée. Very limited production of a few barrels. The parcel is located in the area known as "Bons Arrêts", in the heart of the most renowned terroirs of Côte-Rôtie. Ideally facing south-east, with an extreme slope, it requires meticulous work on the vines by hand. Stéphane Montez works this exceptional terroir, of which he is the sole owner.
Oenology
100% de-stemming, cold maceration for 1 week, punching down twice a day for 3 to 4 weeks, pumping over twice a day for 3 to 4 weeks, long and progressive fermentation, pneumatic pressing at low pressure to avoid bursting the pips. Aged 19 months in new French oak demi-muids (580 litres).
Suggestions for accompaniment
Pithivier of duck with foie gras Eric Briffard style - Entrecote of venison - Perdreau or roast pheasant.
