Sandy-clay soil at La Janasse. Surface area: 0.4 ha. The vines are cultivated without pesticides or insecticides and the manure is of natural origin. The soil is worked without weedkillers to maintain the aeration and suppleness of the soil. Yield: 25 hl/ha.
Harvested in small boxes. Pneumatic pressing. Malolactic fermentation in barrels. Aging: 100% in barrels (from 1 to 3 years) with stirring for 14 months.

Octopus salad with citrus fruits - Fresh or very lightly ripened sheep's cheese.
