Viticulture

At the time of the 1855 classification, the three Doisys (Daëne, Dubroca and Védrines) were one. Until 1846, the estate belonged to the Chevaliers de Védrines. For nearly 200 years, the Castéja family has run it with passion. The subsoil of this terroir is composed of clay-limestone and shallow gravel, set on a limestone plateau with asteria. The planting density is 6,500 vines per hectare. The average age of the vines is 35 years.

Oenology

After a 21 to 28 day fermentation in barrels, the wine is aged in 60% new barrels for 15 to 18 months. The average yield is 10 hl/ha.

Suggestions for accompaniment

Chicken breast salad with meat juice - Duck with orange - Roquefort cheese.
