Always at the top of its appellation with its crystalline and chiselled Château-Chalon, of an incredible complexity. Like this immense cuvée with its smoky and slightly spicy notes, with its inimitable nuances of nuts and curry. The palate is complex, racy, with almost infinite potential. Technique

Viticulture

The estate, founded in 1850, extends over 12 hectares, 4 of which face due south in the Château-Chalon appellation (steep hillside, slope up to 50%, soil of Lias marl covered with limestone scree at the foot of the cliffs overlooking the old village). Traditional ploughing, with no addition of herbicides or pesticides. Very low yields, around 25 hl per hectare.

Oenology

Aged in barrels without topping up for around 6 years. No filtration before bottling.

Game terrine with morels • Lobster with yellow wine • Poultry curry, basmati rice with sultanas and almonds - Hard cheeses (Etivaz, Comté)
