Charmes-Chambertin Grand Cru, Domaine Arlaud - 2022

The word Charme refers to former common fields that were cultivated and then left to lie fallow. The soil of Charmes-Chambertin is supple, a little more sandy than its neighbours, and gives the wines made from it an accessible and charming side, even in their earliest youth. The tannic structure is rather light, which in no way detracts from the wine's ageing potential, because finesse here is not thinness!

Viticulture

Since 2004, the entire estate has been organically farmed. The grapes are harvested entirely by hand and, at the entrance to the cellar, there are two sorting tables (one vibrating and one manual). A small portion of this cuvée comes from Les Mazoyères (0.4 ha), which can legally be blended with Charmes-Chambertin (in certain vintages, this portion is not included in the cuvée, as was the case in 2004).

Oenology

The grapes are destemmed but not crushed. The harvest is then cooled, and the temperature is allowed to rise slowly. Fermentation begins after 5 to 10 days. The vatting period is quite long (around 20 days). The wine is aged in oak barrels.

Suggestions for accompaniment

Roast farmhouse poultry - Supreme of guinea fowl with black truffle.
